I've always liked Richie Blackmore's solos, e.g. Highway Star, Strange Kind of Woman, and the live Smoke on the Water.
Alex Lifeson's riffs on 2112.
Solos on two good (old) Judas Priest tunes: Beyond the Realms of Death and Dreamer Deceiver.
Eric Johnson, wow. I was lucky enough to see him several times at Texas A&M in the late 70's and early 80's. In those days, he still played a lot of Hendrix covers and was more electric blues-based than his later Jazz-influence.
Gilmour's solo stuff is good, e.g. "There's no way outta here."
But the "best"? Al di Meola on "Race with the Devil on a Spanish Highway."

haha, it was a semi joke, i mean its a good solo dont get me wrong but im more impressed with some of the guns and roses stuff as well. One of the best live solos i have ever seen was actually and yes in all gayness i hate to admit, John Mayer. He was just completely going off, i respect his guitar abilities more now, but still dislike his voice. I've always hated yngwie malnsteen (yea thats not spelled right) because it seems the ONLY thing he can do is play fast, I haven't heard him ever play anything that was decent beyond that.
