I seem to be noticing a theme for me. Most of these movies I despise. With the exception of oceans 13 that was mentioned. Mars attacks is so stupid it actually makes it slightly humorous.

Mars Attacks, Thin Red Line and the first three of Woody's that screentest mentioned are good choices

but I'm a big fan of the ensemble cast of The Ice Storm:
Kevin Kline
Joan Allen
Sigourney Weaver
Tobey Maguire
Christina Ricci
Elijah Wood
Adam Hann-Byrd
Allison Janney
David Krumholtz
Jamey Sheridan
Kate Burton
Katie Holmes

[Edited on April 15, 2007 at 7:29 PM. Reason : Wes Anderson movies, too]

and Ocean's 11 of course... also, The Longest Day, and A Bridge Too Far also rank highly with me

To OP: One should not forget Yvonne de Carlo as Sephora; (Sir) Cedric Hardwick; and (Dame) Judith Anderson.

But Zeffirelli's 'Jesus of Nazareth' has to take the honors:

Claudia Cardinale
James Earl Jones
James Farentino
Stacy Keach
(Sir)James Mason
Laurence (Lord) Olivier
Christopher Plummer
Anthony Quinn
Rod Steiger
Peter Ustinov

Ocean's Eleven had a good ensemble cast... but nowhere near the "greatest cast ever assembled". That probably has to go to the Longest Day which has already been mentioned.

To lafta:

I notice you didn't include Edward G. Robinson in your list. The Ten Commandments is a great movie with a great cast, but Edward G. Robinson was one of the worst cases or miscasting ever.
