my logic isn't that "he's so crappy, I could do his job." My logic is that I actually could do a better job than he does.

To use your analogy, if you could actually do a better job at taking care of cut toes than a given doctor whose sole purpose is to take care of cut toes, then you would have more reason to be doing that doctor's job than said doctor does.
