I've subscribed to a few I'd like to have regularly updated, but next to podcasts it indicates "41" (like there are 41 avail. to download or to be listened to) but when I open podcasts, there is only one there, that I've already listened to.

Am I missing something?

Have you hit the little arrow before the selected podcast? It will open all the available podcasts from that podcaster and let you download them ala carte. Hopefully that will help, unless I misunderstood the question.

Well... that sort of solved the issue. That did display the downloads I wasn't able to find for the one subscription it's showing (which was the very first one I signed up for), but I've signed up for at least 4 or 5 more since and they're not here. Does that mean they've gotten lost in translation or is there somewhere else I should be looking?
