I guess you just forgot to mention
Hero
House of Flying Daggers
Fearless

Dragon Tiger Gate (ft. BAMF Donnie Yen)
I think the whole movie is on Youtube
http://www.youtube.com/watch?v=CNgDIuoix-M

-----Classics for good measure-----
These don't have crazy flying, but they have old school goodness

Fist of the White Lotus (ft. Gordon Liu who played Pai Mei in Kill Bill 2; here, he fights against Pai Mei aka Bak Mei aka Pak Mei)
BTW the story in Kill Bill II of Pai Mei destroying the Shaolin temple is *real kung fu lore
http://www.youtube.com/watch?v=YcJ9yxyKlaQ

The Prodigal Son
The best wing chun I've seen and it has Sammo Hung
http://www.youtube.com/watch?v=lkIfcobup2Y
http://www.youtube.com/watch?v=fCGZEEpNNc4

Bodyguard from Beijing (90's goodness)
Jet Li, Collin Chou and the super hot Christy Cheung (you might have seen her on Jackie Chan's "The Medallion")
http://www.youtube.com/watch?v=NxMXkOXD1X4
Looks like this whole movie is on Youtube too

Is there such thing as a bad kung fu movie?

If they're good, they're good. If they're terrible, they're even better.

Ong-bak with Tony Jaa. This movie is badass.

His follow up The Protector is meh.

I've seen Ong Bak, Hero (I loved that one), Fearless, a few others. Just watched Forbidden Kingdom yesterday, it was funny with some decent scenes. I'll have to check a few of those out, thanks.

so people actually like the flying?

i like my movies to be realisitc, especially fighting movies, and ESPECIALLY martial arts movies. the fighting, jumping, acrobatics, etc, should look real.

if you can literally just put your hand in the air and fly, fight while climbing planted bamboo like an insect, walk on water, etc, it is just plain stupid, silly, and a major let down. not to mention, it becomes comedic and sci fi.

Hero was the worst offender. all those fighting scenes where they would do sword fighting in mid-air (and all the other sci-fi scenes)... WTF?

Rule of Thumb: if you can tell in a fight scene that they are suspended by harnesses which can pull them up and enable them to fly, that's a horrible movie.

Iron Monkey.

But, uh, try to find the pre-Tarantino version. The dubbed voices for it are so much funnier.

It's not Kung Fu(it's japanese), but Rashomon is one of the best asian movies ever. The fighting is as realistic as it gets.

Sort of the opposite of the OP's search, but I liked "Circle of Iron." Part of the so-campy-its-good genre.
