adium: multi-protocol instant messenger
transmission: bittorrent
transmit: file transfer
iscrobbler: last.fm
vlc and mplayer: video

as well as the standard mail, itunes, terminal

ohhh yeah

vlc player is indispensible

as is the unarchiver (one of the best pieces of software i've ever come across... it's simple and always works)
