I chose the combination of flavors because naturally, chocolate is bitter and rich. In order for something to be as far from chocolate, in taste, as possible, it would need to be sour, sweet, salty, and lean. Head cheese is very rich and though different, the flavor profile is not that different.
Same with Liver Pudding (not salty at all normally, but it is very rich and not at all sour or salty).
