They have green peanuts (fresh from the ground) at the Farmers Market. I've got 4 pounds on the stove right now.

The ones for sale will be dry in a month, so if you want them through the winter you need to boil them now and stick them in the freezer. Then just re-boil them whenever you want them.

the best ones always seem to be the ones you buy from some guy in overalls on the side of the road with a big pot on a propane burner stirring them with big wooden paddle

no, i've only had them like that^^. i guess what i'm talking about is more than taste.

i've boiled them before and it's just not as much fun as seeing some old guy with a hand-painted sign on the side of the road and sitting with him and eating boiled peanuts while he talks your ear off.

I'm used to going out in the field and picking four or five 5 gallon buckets full every year, so it's weird for me to buy them. The times they are a changing.

^^^^ ahahahaha so true. There was a guy like that down the street from my grandparent's place when they lived in Brevard. He would always tell you the craziest stories when serving up your peanuts

i want to make some of these, so what do I have to do? I am going to the farmer's market here in Greensboro this week. what kind of peanuts should i get, how much, and how do I boil them?

Get a pound or two.
Put them in a pot of boiling water and dump in a ton of salt.
Stir them every once in a while for a couple of hours.
Add some more salt every once in a while.
Enjoy.

These things are taking a lot longer to cook. That means they're not as fresh out of the ground.

They're edible now, but I want the really thin shelled ones to be like a raw oyster before I let them out of the pot.

2.5-3.5 hours I think.

Just stir and add a couple of cups of water (and a little salt) every once in a while. After a couple of hours I just start eating one of the largest/most solid looking ones every once in a while until I deem it done.
