I stand about 5 feet from the grill and threaten it with flame. It's done at that point.

Pittsburgh style cooks the steak at a really high temperature for a really short period of time. It usually chars just the outside of the steak while leaving the inside basically rare. I had it for the first time a couple years ago at a steakhouse in Colorado after someone was basically going to stab me if I didn't try it (not a big fan of "rare"). It was fucking awesome. It's suppose to really bring out the flavor of the steak without overcooking it. I'd have to say it worked that night and has worked pretty well since then.

But I'll only get steak if I'm at a baller steak house or if I'm grilling out at home. So pittsburgh style at nice steakhouse and medium rare to medium at home. Everywhere else...no steak.

pittsburgh style sounds cool but like you I'd probably only get it at a place that really knew steaks

Rare and occasionally Pittsburgh rare

i could handle med rare if it's a nice steak house, but most places overcook their steaks anyway
