1/12/2009 10:58:11 PM
I miss being able to buy pitas whenever I want. I recently learned how to make them though and it's pretty easy ^ Stuff stuff into the pocket to make a sandwich. Or cut it into wedges and dip it into something like hummus. [Edited on January 12, 2009 at 10:59 PM. Reason : stuff]

So this thread made me want pitas and I was going to make a pita sandwich with some leftover chicken and salad. my mom always has pitas...I went down and there were none. now I am bitter.

I broil them. I posted it in the lounge in the recipe thread at some point.Use dried, soaked, uncooked chickpeas, though. Canned ones are too soft. here:1 pound dry garbanzo beans1 onion, quartered4 cloves garlic (or more if you love it like I do)1 big bunch parsley, stems removedsalt, pepper, and a lot of cayenne, plus cumin and/or coriander if you have them, but I didn’t2 teaspoons lemon juice1 tablespoon olive oil1 tablespoon all-purpose flour2 teaspoons baking sodaSoak beans for 24 hours, then drain and rinse well. Put beans and onion in a food processor, then process until finely chopped. Remove most of the bean mixture, then to the remainder add the garlic, parsley, spices, lemon juice and olive oil. Stir in with the rest of the mixture and refrigerate for 2 hours (I didn’t do this on my first batch and it turned out fine, but it was better after it refrigerated overnight). Stir in baking soda and flour, then form into patties (~1 inch across). Fry until brown and crispy, either deep-fry style or in a little bit of olive oil in a skillet. (Apparently I lied when I posted it before ... brush with a tad of oil and broil)I just eyeballed the flour and baking soda, so that might need adjustment to help it stick together.[Edited on January 12, 2009 at 11:20 PM. ambrosia1231 you keep talking about your hummus when you gonna make us some or let us know your recipe?
1/13/2009 12:19:26 AM
2 cans drained chickpeas1-3 cloves garlic, depending on your preference1-3T lemon juice2-3T tahinisalt to tasteIt does blend. If you like runny hummus, don't drain the chickpeas completely. If you like a thick hummus, drain them very well.I don't follow a recipe anymore, and I don't remember where I got the one that I started with. Now I just eyeball everything.
