In no particular order:
1. Silver Train 2. Star Star (aka "Starfucker") 3. Sway 4. Dead Flowers 5. Sister Morphine 6. Salt Of the Earth 7. She's A Rainbow
I don't think any of those songs are on any of the major greatest hits compilations, and I'm not sure I've ever heard any of them on the radio, save ONE time when I heard Sway. (Maybe I've heard Silver Train or Dead Flowers once, but I don't remember it).

3, 4, and 5 are in my top five stones songs, but I would never consider any of them to be obscure stones songs. then again, I grew up listening to the stones on vinyl and cassette instead of on the radio.

How did you pick She's a Rainbow? Everything on Their Satanic Majesties Request was way too psychedelic for my tastes.

^^ Yeah, it might be my favorite Stones song. Dead Flowers and Can't You Hear Me Knocking are way up there too, though.
^^^^ Yeah, not my favorite album, but it is a good song that a lot of people don't know...and yeah, Goat's Head Soup is a great one. I have a vinyl copy of it (along with It's Only Rock & Roll and Some Girls, and a couple of older live albums).

I would imagine a lot of people would know the song She's a Rainbow as it was used for one of the original iMac commercials that aired ad nauseum.

"2000 Man" was a great song on Satanic Majesties, though it always makes me think of the end of Bottle Rocket.
The lyrics are oddly prophetic as well.
^ "You Got the Silver" is a great track.
