I am doing a demo of an iPhone application. What are some good applications I can use to show what I am doing on the device, on my Mac?

If you wrote the application you should screencap the simulator.

Is there a good app to have it run live versus a screen shot? I am using external hardware on the device and will not be able to run it through the simulator. I will be running it on the device for demos connected to the macbook.

If you can jailbreak the iPhone, then you could install a program called Display out, which mirrors the screen through the video out cable (or VGA out cable if you have an iPhone4)

Or you could use Veency (again, jailbreak only) and a VNC client on your mac and that would allow you to see and control everything on the iPhone from your Mac (although graphic intensive things like games suffer from really crappy framerates)

I can't think of anything that even comes close to this functionality on the non-jailbreak side of things.
