I already have the Force Unleashed I & II (which were both awesome), Red Dead Redemption (Great Story Line!) and Metal Gear Solid 4 (what a great end to a great series)...

Now I want more, but I'm behind the curve a little here...

If you want something unique in addition to the many great games listed, I would suggest Valkyria Chronicles. It's a lot of fun as a play on the tactical RPG and was probably one of the most satisfying.

Other personal favorites: Metal Gear Solid 4, God of War 3, Red Dead Redemption, Heavy Rain, Uncharted series. MGS4, GoW3, and Heavy Rain can probably be done as rentals though.

I prefer games like Fallout 3 on the PC.

Infamous is definitely worth your time.

Little Big Planet is probably gives you the best bang for your buck. You can find the GOTY for a steal, and then you get some of the best user-created content right there on the disk plus access to millions of other user created levels.

The Lion King (SNES) crossed with Garry's Mod (Half-Life 2 PC)

Metal Gear Solid 4 sucked as a game. 3 Hours of game play, but 8 hours of cut scenes. They should have just made it into a non interactive movie and be done with it.

Which kinda sucked because the limited game play was actually fun, just wayyyy too short.

I basically scan metacritic or gamerankings and if there's a game that gets a score over 80 and is $20-$30, I'll give it a try.

Games I'd recommend that I have:
Red Dead
Bioshock
Dragon Age
Demon Souls - only if you're sadistic and willing to face an extremely hard beginning
GTA4
MGS4 - only if you've played the previous 3, otherwise you're wasting your time

It was fun but not amazing. I didn't watch any of the cut scenes so I couldn't tell you if the story was any good but it's the best turn-based strategy I've played since FF tatics. The levels and missions are diverse keeping the game fresh and making you want to get an A on every course. All compliments aside, I still wouldn't say amazing. Mostly it's because your characters can die and be lost for good ruining your cute anime girl squad.
