Delicious Homemade Cherry Cobbler! NOM NOM NOM
Filling: ~1 3/4 - 2lb pitted sweet cherries 1 cup sugar 2 tbspn flour 1 tsp kirsch liquor dash cinnamon 1tsp vanilla 1/2 tsp lemon juice 1 tsp OJ (optional)
Topping: 3/4 cup flour 3/4 cup brown sugar 3/4 cup oatmeal 7 TBSPN butter, cut into small pieces (NOT MELTED) 1/8 tsp salt 1/3 cup sliced almonds
Pit the cherries if you haven't done so (pitter is like 8 bucks at BB&B or you can do by hand which takes a lot longer) add sugar, flour, kirsch liquor, cinnamon, vanilla, lemon juice, and OJ and stir it up. Set aside
For the topping, mix flour, brown sugar, oatmeal, salt, and almonds in bowl. Add butter and mix with a pastry blender or fork if you don't have one. Should end up looking like this
I like to add a little bit of the topping into the filling, but its not necessary.
Preheat oven to 375, place filling in greased cooking dish ~11x7
add topping evenly
Bake in oven 45minutes
Enjoy! 6/10/2012 5:06:39 PM |
