You can get so much value from a used vehicle. Especially yesterday's "top of the line"...

I don't follow. On an 8-10 year old car leather (or a leather like material) might add $100-$200 to the value of the car. Would it be ridiculous in your opinion for the OP to look for power windows as well?

I've got an '02 Subaru Outback that I need to sell now that I got a different daily driver

I haven't listed it yet because I want to put tires on it before I sell it.

^^^Good point, I probably have an outdated viewpoint of leather not being as common or as feasible on a budget--but you're right, it clearly isn't uncommon anymore.
