knock 'em down yay page 13

here's a nice crockpot recipe for the masses

Cook Time: 8 to 10 hours
Prep Time: 30 minutes

YIELD Makes 6 to 8 servings

INGREDIENTS
1 package (12 ounces) reduced-fat pork sausage
8 cups chopped red cabbage (1 small head)
3 potatoes, diced
3 apples, diced
1 onion, sliced
1/2 cup sugar
1/2 cup white vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves

PREPARATION:
Brown sausage in large nonstick skillet over medium-high heat, stirring to break up meat; drain fat. Combine sausage and remaining ingredients in large bowl; mix well. Spoon mixture into slow cooker. Cover; cook on LOW 8 to 10 hours or until potatoes are tender.

I've been cooking chilis for a few years now in my crocker and they are great.

I want to try pork, ribs, chicken, etc now.

Can you put raw meat in the crock or do you guys grill/oven/stove them first?


With pigs and chickens i worry it doesnt get hot enough to kill the bacteria.

^I've been eating dishes based on raw meat cooked on low for 8 hours my whole life and haven't died or gotten sick yet

they are perfect for raw meat. if you are worried, use a meat thermometer to make sure.

The only thing I've ever precooked before putting it in a crock pot is ground beef(any ground meat for that matter) and that's just to cook the fat off. You can brown meat to give it a better look but its not required.

When I put any kind of beef in a crock pot, I will sear each side in a skillet (30 seconds to one minute), just until it's brown. I do this to seal in juices add in flavor. The crockpot is very efficient for cooking things through.

Alton Brown says that doesn't actually seal in juices, just adds flavor.

Just made chicken salsa.

Just got some of that "hot fresh salsa" from Harris Teeter, dry rubbed two chicken breasts (cajun) and put them in with half a tub of salsa on top of it. cooked for 6 hours and pulled apart chicken with a fork. added in some corn and black beens and served on tortillas with sour creme, lettuce and a little salsa (other salsa gets absorbed in the chicken). it was cheap, easy and pretty tasty.

Do you think it would affect it too much if you added the beans and the corn (drained) to the crockpot? Cause that sounds really good, but I'd likely put these in too, if it wouldn't make it too mushy.

Yep. I remember a few years ago they had a really interesting story on NPR on the science being searing and braising meats. Of course now I can't find the damn podcast There was also a great one on the science of cooking with garlic.

1 package McCormicks country style chicken mix
1/3 cup flour
2 cups water

Whisk above till smooth

5 chicken thigh filets
3 bacon strips

Place bacon strips on the bottom of the crock pot
Brown chicken both sides
Place chicken in crock pot
Poured mixture on top
Cook on high. 3-4 hours

If you haven't made this before you really should try it. Made it for the UFC friday and everyone loved it.


I strayed slightly from the recipe adding some of my typical chili ingredients like squash, okra, chopped tomatoes, jalapenos, serranos, habaneros, green peppers, and olive oil.

The taco seasoning was a great touch though that I hadn't tried before.

Crock Pot Broccoli Cheese Soup

* 1/2 cup green pepper , chopped
* 1/2 cup onion , chopped
* 2 tablespoons butter or 2 tablespoons margarine
* 1 (10 ounce) can cream of chicken soup
* 1 1/2 cups milk
* 1 lb Velveeta cheese , cubed
* 1 (10 ounce) package frozen chopped broccoli

Directions:

1. Saute onion and green pepper in butter.
2. Combine all ingredients on low in crockpot for 3-4 hours. Do not add salt.

ooooh this reminds me that I have an email from Real Simple with 40 soup recipes

I love soup (NOT A CASSEROLE ANDYMAC) but I don't like it from a can...which keeps me from making it often

^hell no. venison chili is perfect. adding pork fat would make it taste way too fatty. (of course i much prefer a lean chili to a greasy chili.

Has anyone made jambalaya in their crock pot? I might try doing that later this week. This recipe looks like a good starting point:

Weird, just realized this recipe doesn't have any rice. WHERE'S THE RICE?!

^^ Yeah that's usually what I do too. Keep the rice from getting gummy. Just weird they don't mention rice at all in the recipe. Guess they just assume everyone knows to serve it over rice.

Y'all know there are people out there that if it's not explicitly stated in the directions they won't do it. You should check out the rageaholics on Amazon reviewing cookbooks sometime. Bitches be crazy.

The basic vegetable soup was fantastic, although I added more stuff and cooked it in a pot, since my crockpot was too small for so much. Also good was the brunswick stew.

deemarie made the chicken taco chili yesterday. i like my chili a little thicker, so she added a small can of tomato paste. it was excellent.

so are there such things a small roasts? i would like to do a pot roast but all the cuts at my grocer are huge and there are only two of us.



simple easy crock pot chili is what i'm having tonight. It's stupidly simple, but I love it and a fresh baked bread bowl makes it all that much better. I can't wait for dinner tonight!!!

^^ Take the roast you're interested over to the butcher and ask him to cut it in half. I have done this before at Harris Teeter with no issues. Once I even went to the guy and said, "I need a butt that will fit in my crock pot," and he pulled one out of the fridge in the back and cut it perfect for me.

i made the chicken taco chili posted way above... it was awesome

i used plain no-fat greek yogurt in place of sour cream, a little low-fat cheddar, and avocado for toppings. then i put it all in a corn tortilla. soooooo yummy.

^^ I have a couple, but they don't call for a crock pot. Almost a shame to crockpot a leg of lamb when you can braise it to a nice med-rare/medium. A shank might be better for the crockpot, and you can prepare that in much the same way you would a pot roast.

Made a 3 meat chili in the crock pot last weekend. Tried something different with it and used a small pork shoulder a small beef butt roast and slow cooked them until they fork shreded and added some cured chorizo at the end with the second can of beans. Different, but delicious!
