Cheap meal ideas

1 Korean BBQ Sauce from grand asia market (squareish bottle with a red top)
1-2 cups rice
1/2 lb mixed veggies
4 tbspn oil (for frying)
2-3 eggs beaten
~1 lb of beef top round or other thin cuts of meat
soy sauce (to taste)
1) cook rice and veggies, keep warm
2) while rice and veggies are cooking marinate meat in BBQ sauce according to directions
3) add 2 table spoons of oil to a preheated wok (med-high heat), when oil is hot add beaten egg, fry until most of the oil is gone and the egg is almost dry. Remove and cut into pieces.
3) Put meat on grill. Since it's thin cut, I've found usualy about 4-5 minutes / side works well, and charcoal grill works best.
4) While side 1 is cooking for the meat, add last 2 table spoons of oil to wok, fry rice and egg together.
5) Flip meat over.
6) While side 2 is cooking, add soy sauce to rice (I recomend about 2 tea spoons or so) continue to fry rice adding mixed veggies.
7) Remove rice and meat from heat and enjoy. Recomend microwaving some BBQ sauce to use as dipping sauce.
Should take you about 30-40 minutes to do everything and serves 2-3. And if you don't have a wok, go buy one, it's the greatest invention of man kind.

Also fried chicken nuggets are pretty easy to make. Just beat 2 or 3 eggs and add some lawry's seasoning salt, cut chicken breats up into small chunks, coat in egg and roll in italian bread crumbs and fry in oil. (again I recomend a wok and a few table sppons of oil)

Search epicurious.com and foodtv.com for easy recipes. there are all kinds of search options you can limit them by.
spices help everything. you can get good, quality and very inexpensive spices (in the little bag) at world market.
you can also get great deals at Sam's club. They have cheap chicken, pasta and salads.
I make this awsome salad that's really a meal.
Get the Mixed Baby greens. tear them into smaller pieces. add sliced red onion, bell pepper (any color you like), cucumber, tomato. then add crumbled feta and chopped pecans. you can also add sundried tomatoes if you like. i dress it lightly with a half and half combo of Balsamic vinegar and olive oil. (i like mine acidic, but you can use less vinegar if you like.)
I usually make a really big salad, and it can really fill you up. If you get the mix at Sam's club, it's very inexpensive.
For a variation I sometimes add a chicken breast, that's i've lightly dredged in flour and covered in Herbs de Provance (from world maket) spices. grill or fry in olive oil, you can use a little butter to brown it. Cut into pieces and sprinkle on salad. It is so tasty. 6/26/2006 12:41:40 PM |
