I could never go to the arcade without playing WWF Wrestlefest. Favorite game ever.

Also liked: The Simpsons, X-Men, any Capcom fighter, Tekken series, Outrun, Arch Rivals, and I forgot the name of this one shooter game I played religiously. If I think of the name of the game, I'll post it in here.

Galaga is by far the best, but also worthy of honorable mention are Missile Command (already mentioned in the thread), and the much newer (but still old) Battletoads. Its greatness came from the fact that it was fucking impossible.

Its actually a bit easier if you don't mind the cost... you get to keep running the speederbike level repeatedly without having to go back to the beginning and play through the first two levels (plus the bonus round). Besides that, it gets much easier on the levels after that.
