This would take forever for me, I can think of about five hours' worth of good covers.

So I'll just go with the Ryan Adams version of "Wonderwall".

There's no point in doing a cover if you're not doing something interesting with it.

Adding a lame white boy reggae beat and the same shitty over-chorused vocals that show up on every 311 recording ever is not interesting.

As far as the most covered song, the general consensus on straight covers is "Yesterday," but there's a very strong argument for public domain songs like "Man of Constant Sorrow" and "In the Pines/Where Did You Sleep Last Night?"
