Swiss Chicken

Ingredients:
fresh boneless chicken breasts. ( 2 pieces=4 halves)
can of condensed cream of chicken soup
1/2 cup of milk
swiss cheese slices
stuffing mix(pepperidge farm is good)
butter or margarine


In a medium baking dish (8x8 or 9x13) coat the bottom and sides with cooking
spray. Rinse chicken and put in bottom of dish.
In a small saucepan, mix together the can of soup and about milk.
Heat on low until soup and milk is mixed.
Pour the mixture over the chicken
Layer several slices of swiss cheese over each piece of chicken
Use about 2-3 cups of dry stuffing mix and pour over chicken.
Dab stuffing mix with butter or margarine.

Cook at 350 degrees for about 40 minutes.

Also you can make this in the crock pot...all you do there is spray the
inside of the crock pot, put all the ingredients in the crock and cover and
cook on low for about 8 hours or on high for about 4 hours.

3lbs country style pork ribs
12-16oz bbq sauce
8oz water

cook 8hrs


or

2lb young chicken, remove gizzards
cook 8hrs in water

strain and remove meat

in the meantime:

24oz cream of chicken
8oz milk
a bunch of seasoned salt
16oz egg noodles

heat sauce, add chicken, pour over noodles

You really can't go wrong with a crock pot. For a quick, easy, and healthy meal I just throw in a package of boneless, skinless chicken breasts along with assorted veggies - I use corn, green beans, diced garlic tomatoes...whatever. Add salt and pepper to taste.

Nothing fancy, but very healthy. Just make sure to eat the "juice" that goes along with it, because slow cooking causes the nutrients to disperse.

just about to try the chickpea-lentil stew i made:

1 28oz can of tomato puree
1 medium onion
2 tsp garam masala
4 cloves garlic
2 cups veggie broth
2 15 oz cans chickpeas
1 bag red lentils
as much crushed red pepper as you want
1/4 cup sesame seeds
3 chile peppers (or more, if you want lotsa heat)

sautee onion, garlic, peppers, sesame seeds until peppers are soft. put everything into the crock pot and cook on low for 8-10 hrs. add a little plain yogurt when it's done, and black olives if you dig 'em.

I haven't made this yet, but I am going to give it a try this weekend. I will probably throw in some different meats as well.

Crockpot Brunswick Stew

Makes 8 servings.

1 Chicken, 3 Lb., cut up
2 quarts Water
1 onion, chopped
2 cups Ham; cooked cubed
3 Potatoes, diced
2 cans Tomatoes; 16 oz. each cut up
10 ounces Lima Beans, frozen and thawed
10 ounces Corn; whole kernel, frozen
partially thawed
2 teaspoons Salt
1 teaspoon Sugar
1/4 teaspoon pepper
1/2 teaspoon Seasoned salt

In a crockpot combine chicken with water, onion, ham, and potatoes. Cook covered on Low for 4 to 5 hours or until chicken is done. Lift chicken out of pot; remove meat from bones. Return chicken meat to pot. Add tomatoes, beans, corn, salt, seasoned salt, sugar and pepper. Cover and cook on High 1 hour.

I am making a pot roast tomorrow. Just finished putting it all together and popped it in the fridge. Now I just have to take it out of the fridge when I wake up, add the water/beef broth, and turn it on. Has to cook about 12 hours. Here is a picture of the before:



Believe it or not, there is a 4lb. chuck roast under all those veggies. NOM NOM NOM NOM NOM

4lb Chuck Roast

1 medium onion sliced (i added this to the recipe because I love onions, so feel free to omit)
1 package dry onion soup mix
3 cups water (I am doing 1 cup water, and 2 cups beef broth)
Salt, Pepper, Garlic, etc etc to taste.

Put it all together in the crock pot and let that bitch cook for 10-12 hours. I rubbed the meat down with the dry onion soup mix rather than just dumping it in.

scott's is the sauce from a pretty famous bbq joint in goldsboro that is only open a couple days a week for lunch now. they sell it in most food lion's and walmarts around here.

also, there's a mix they make and sell at nahunta pork center that you mix with 1 gallon of apple cider vinegar that gets my approval. actually better than scott's imo.
