NEW REQUEST

I was going through my pantry and realized I have a crapload of coconut milk for some reason. I don't really feel like making the usual curry with it.

Any suggestions?

a crockpot is cheap to purchase and makes transporting the food and keeping it warm really easy

I got mine at Target for 17

you'll want a slightly bigger one for 8 people

the pork roast is a bangin idea

try it with habanero and pineapple

My first thought was a pork tenderloin. I like to grill it, but you can also roast it. Line a baking pan with foil, pour in 1/4 cup or so of water, put a wire rack on top, then put the seasoned pork on the rack. For seasoning I use Cavender's Greek Seasoning (it does have MSG), a little olive oil and some onion powder. Roast it at 450 for 15 minutes, then lower the heat to 375 (I think) and continue for 45 minutes. The initial high heat gives it a crispy outside.

Fresh or frozen green beans can be steamed in a covered dish in the microwave for a few minutes. Put a little butter and maybe some lemon pepper on them after they're steamed.

Baked sweet potatoes: stab each potato deeply a few times with a knife (the deeper, the better), wrap in a paper towel and microwave for 6-8 minutes? I use the baked potato setting, but it usually takes a couple additional minutes. Or you can just wrap them in foil (no stabbing necessary) and bake them at the same time as the pork. The longer they bake, the softer and sweeter they get.

Or you could do pot roast in a crockpot. Get a hunk of top or bottom round, put it in the crockpot with chopped potatoes and carrots, and add some McCormick's pot roast seasoning (it comes in packets). I think water is needed too, but I don't remember how much. The crockpot should have come with a recipe book anyway. Let 'er rip at low heat for 8 hours.
