The filling is often (but not nearly always) pickled fume or other acidic/vinegary fish-fillings or pickled products. I could see how someone who didn't make sushi themselves might be confused and think the acidity was in the rice. But yeah, it's the fact that the rice isn't vinegared that makes it not sushi.

Yes. Yes there is. In addition to not using it as a verb, it's not sushi if it's not vinegared rice. If it's vinegared rice of the right consistency then you won't get too much shit for calling it sushi.
