Glad you posted this, b/c I have 1 lb. 93/7 beef frozen in the fridge and couldn't decide what I wanted to cook. Tacos always seems to last for a longggg time, but the sides/toppings are hella expensive.

Because I prolly won't eat a whole head of lettuce (unless I do buy some sandwich meats), I get the bag of shredded lettuce for the tacos, an onion, sour cream, tomatoes, cheese. Shit adds up when you only have $30. Oh and the dinner kit thing that comes with shells and the salsa and mix. [Edited on January 19, 2009 at 4:26 PM. Reason : .]

^ Well, I already told you why I don't have any money, so it's what I have to deal with til' Wednesday, but then that money I get is going all to bills. So I bet I'll have like $100 only to last til' NEXT Wednesday (and that's if I get unemployment another week). *sigh*[Edited on January 19, 2009 at 4:35 PM. Reason : .]

stuffed peppers:brown the beef, add 1/2 cup of rice, 1/2 cup water, some worchestershire sauce, and a couple cans of stewed tomatoes, simmer until the rice is cooked. top with grated cheese and dish into some bell pepper.
1/19/2009 6:31:37 PM
brown the meat. throw in two cans of tomatoes, some velveeta, and whatever spices you like. boil some macaroni and mix it in when it's done. it's like hamburger helper, but better.
1/19/2009 6:35:58 PM
^top with cheddar cheese (or velveeta) and bake used to call it one dish meal!

There's an Aldi in Cary, Maynard and N. Harrison I think. They have the best price I have seen on parmesan. I need to go buy 3 or 4 to go with my 12+ jars of spaghetti sauce.
1/20/2009 10:57:42 PM
OMG...why you have so much in bulk??? I thought I was the quick and easy spaghetti person for when I'm broke.

meatloafs freeze well, and it isnt an enormous effort to make 5x the recipe like meatballs. or you could make a couple of lasagnes. here is an unconventional ground beef recipe i have tried before and found to be tasty. http://allrecipes.com/Recipe/Popeye-Special/Detail.aspx one thing that is cool about the allrecipes site is you can infinitely scale the number of servings up or down. Popeye Special INGREDIENTS * 1 pound ground beef * 1/2 pound fresh mushrooms, sliced * 1/2 pound fresh spinach, torn * 6 green onions, sliced * 1/4 cup chopped celery * 1/4 cup chopped sweet red pepper * 1 teaspoon garlic salt * 1/2 teaspoon pepper * 6 eggs, beaten DIRECTIONS 1. In a large skillet, brown beef and mushrooms; drain. Add spinach, onions, celery, red pepper, garlic salt and pepper. Cook and stir for 1 minute. Add eggs; cook and stir just until the eggs are set. Serve immediately.
