in other news...my loving hubs and his pal (grrr ) polished off my bottle of limencello that i bought in italy one night. he put it back in the fridge, but there was barely a cordial glass full left in the bottle. when cleaning out our old fridge i saw it was nearly empty and got really upset (it was the last thing from my trip). also, cello seems to turn out a bit better when you use something like sugar in the raw as compared to regular sugar. we regularly make lemon, lime, and orange along with batches of strawberry, peach, pineapple, whatever every now and then. i'd say the random batches is more like cheating since you actually end up using the fruit juice, but it still turns out great. 7/24/2009 11:42:35 AM |

but I was going to make some blackberry lemonade yesterday with the juice from a bunch of lemons, so I thought about how I'd wanted to do this too. So I made a batch of each and got to use the whole lemons
I saw tips that recommended just peeling off the peel with a veggie peeler instead of zesting it, so I started out that way, but then I needed some zest for the lemonade and whipped out my microplane grater and realized that was way easier than trying to peel off chunks of the zest without getting the pith
I am excited
and also the pretty lemonade

Any thoughts on whether grapefruit zest would be as flavorful as lemon? The liqueur recipes I see with grapefruit all call for juice too, but they are not going for something as strong as limoncello. My limoncello is still steeping. I added the sugar and water about 8 months ago, and upon a small taste decided it had a looong way to go before it was comfortably sippable
But by this point, over a year after its creation, all my zest seems to be completely white, meaning I've extracted what flavor it has to give. I suppose it's time to go for broke and filter it all out. I will do this once I've fixed the plumbing in my kitchen, as it is now I can't use my sink
Skwinkle - I thought about trying the "peel" method but I thought it would have been harder to do it that way and make sure I didn't get any pith. Also that since planing method would break the rind up into such small specs that the alcohol could more easily penetrate and draw out the flavor. Guess it really doesn't matter though, let me know how it turns out! As far as the grapefruit goes, I'm not sure that the rind holds as powerful a flavor as the fruit. That's the way I feel about it. I just have a feeling that grapefruit zest isn't very strong, but I have nothing to base that on. I may try it and see. The worst thing that could happen is having some not-very-citrusy Everclear, and that can be easily fixed.
I decided to try the peeling method because one of the sites I looked at said you can tell if it's "done" with the first phase if you take out one of the sections and it snaps like a potato chip. But then I realized each section had a little pith on it I had to scrape off, and that sucks. And the surface area thing. So yeah, zest seems the way to go. 3/24/2010 2:07:53 PM |

My neighbor makes this stuff all the time. It is so freaking good! He also does orange, lime, rasberry, etc.
The first night he had it out there, I knew it was alcoholic, but didn't think it was that heavy - had prolly 15 shots of it sitting out on the deck....that was a mistake!
