If she really likes sweet wines, get her a good dessert wine for after-dinner / dessert.

If you have the money to spend, try getting a half-bottle of Château d'Yquem Sauternes. I have one that was about $150 waiting for a good night. Its amoung the best, if not the best, Sauternes in the world.

There are plenty of other Bordeaux Sauternes that are a lot less expensive. Generally, the cheapest you will find (that isn't crap) will be around 30 bucks for a half bottle. Souternes are a favorite of mine.

For a dessert wine that is a tad cheaper, try the Muscat varieity. Very sweet, tastes a bit like raisons (because the grapes are left to dry on the vines).

Or if you want to try something REALLY sweet, try an ice wine. Ice wine is basically made from grapes that are frozen on the vine, so the only part still liquid when they process the grapes are the areas with the highest sugar concentration. Inniskillin makes a good Riesling ice win. Its about 80 bucks for a half bottle.

I love cooking for my b!tch and then piping her alll silly afterwards.

but I'd go with red wine (merlot) and a pasta dish. try sardines and angel hair olive oil and parsly ... or like a spaghetti meatball dish with french bread ... and veggies with either dish.
