the turkey we cooked last year was the first time i'd ever had a turkey NOT be too dry. and we brined it and cooked it in a roaster oven (like the picture below) and it cooked really fast and was much moister than a turkey normally is when cooked in a traditional oven.that being said....

A church near my house always sells pork shoulders with sauce right before Thanksgiving. Best thing that ever happened to our menu, with the possible exception of my brother figuring out how to mamke dank-ass stuffing. No idea what goes into it. Not sure I want to.But anyway:-turkey-pork shoulder-mashed potatoes-turkey gravy-dank-ass stuffing-biscuitsThough honestly I prefer the leftovers stage. Pork shoulder biscuits plus mashed potatoes that have been cooked on a skillet like a redneck latke = win.

That's what it means!It's not really hard. You just buy the sugar pumpkins (the smaller ones), cut it into 4ths, scoop out the seeds, then rub them with oil and roast for about 1hr (or more if needed).Peel off the skin and put the meat in a blender/food processor and puree. Then use it instead of canned pumpkin in your recipes.
