Makes 3 cups. Serves 2.
Ingredients: 1/3 cups (2.5 ounces) rice - medium- or long-grain rice will work fine 1/2 cup plus 2 tablespoons (3 ounces) blanched almonds A 3-inch piece of cinnamon stick 1 1/4 cups hot tap water 1/2 cup turbinado sugar, plus more to taste 1 cup cold vanilla soymilk
Method: In a large bowl, combine the rice, almonds, cinnamon stick and water. Cool, cover and refrigerate overnight. Pour the mixture into a blender or food processor, add the sugar and blend on high for several minutes, until the mixture is as smooth as possible - there will still be a hint of grittiness when you rub a drop between your fingers. Strain through a fine sieve, pressing on the solids until only a dryish pulp remains. Pour into a pitcher and add the soymilk. Taste and sweeten with more sugar to taste, if needed. Enjoy over ice." |

And no soy. Do you think I can just substitute rice milk in that recipe? 1/19/2011 4:18:50 PM |

^^ so the mixture is never cooked... i thought rice had to be cooked for humans to eat?
^ why not? use whatever you want: milk, rice 'milk', soy 'milk', almond 'milk', oat 'milk'... i could see it tasting amazing with oat milk and almond milk.

^^ Well I mean, regular horchata uses rice water, so rice milk wouldn't be a stretch. 1/19/2011 4:22:51 PM |

SO when i make this shit and blend it in a blender, should there be like a fucking layer of shit like 1/3 of the way in my blender? i was under the impression that there would be way less rice powder

In this hemisphere, Horchata (sometimes referred to as Mexican Horchata) is used in Central American and Mexican cuisine where it is a rice-based beverage because of the lack of availability of Chufa. Many recipes call for almonds as a substitute due to there likeness to Chufa. While the drink is usually "milky" colored, some recipes call for Milk, and others do not. Other ingredients include sugar, cinnamon, and vanilla." |

I know at Chubby's they have to stir it before serving because everything settles to the bottom.
I might try making this out of almond milk and see how it tastes. 5/4/2011 7:02:29 AM |

Yeah I mean its a bunch of liquids with non soluable solids dumped in it. I forgot to put ice in it I think that helps to catch some of the cinnamon, I also put nutmeg in it because I always use nutmeg with cinnamon, not even sure what it tastes like by itself

My horchata is like all after taste if you eat anything with it. You either have to take a huge gulp or there is no flavor. Maybe more vanilla next time i also definitely need a better way to strain haha theres like an inch of rice shit at the bottom of the pitcher
