^I think people are scared of opening up something that isn't a "traditional" restaurant (not traditional in the food sense, but in the "appetizer/entree/desert" sense). Even a lot of places that do tapas still have a separate tapas menu and then a regular menu with entrees (so basically the tapas menu is just a list of appetizers).
I think tapas were very trendy about 5/6 years back. Some tapas places did well while a lot failed and it scared people away from giving them another shot. 5/19/2011 9:30:01 AM |
