ok. FRENCH ONION SOUP

made it up as i went along so...yea, i suggest you just throw in whatever you think will work, too didn't home make the stock...that would make it way better so, if you home make your stock ignore the store bought kind, lol.

ingredients:
butter
1 small to medium red onion
1 LARGEEEEE vidalia onion
1 LARGEEEEE sweet yellow onion
salt
pepper
red cooking wine (i used dry marsala)
worcestershire sauce
bay leaf
brown sugar
thyme
paprika
celery seed
garlic (i used minced from a jar, clearly fresh is better)
2 cans swanson's beef broth
1 can campbell's beef consumme
1/2 pound Gruyere cheese
loaf of french bread

i *THINK* that is it but i could be wrong.

anyway...what i did:

1. cut onions into 1/4-1/2 inch straws/strips
2. 1/2 stick of butter and 1-2 tablespoons brown sugar + onions in a stock pot on low heat for...at least 30 minutes, but the longer you leave them, the squishier and yummier they get so i'd say between 45min - 1.5 hours; stirring occasionally (i probably had mine in there 45 minutes)
3. then i added 1/2 to 1 tablespoon minced garlic and 1/4 to 1/2 cup marsala wine to the pot and let simmer together for like 10 minutes; stirring occasionally
4. then i added the 2 cans of broth, 1 can beef consumme, bay leaf, couple splashes worcestershire, couple shakes of thyme, probably 2 tablespoons paprika, shake or 2 of celery seed, fresh ground black pepper to taste (i did like...4-5 grinds)
5. bring to boil for 1-3 minutes, i added a couple of grinds of sea salt while it was boiling
6. reduce heat and simmer for however long...the longer you simmer, the more the flavors will mix. i was in a hurry cause we had a movie to catch so i only simmered for like 20 mins (but i'd say try to do it for like 45 at least); stirring occasionally
7. put soup into ceramic oven safe bowls (coffee mugs also work), topped with toasted french bread (made sure most of bread was in the bowl so it doesn't burn under broiler), topped bread with hunk or two of cheese, placed under toaster oven broiler until the cheese got melty and bubbly

serve w/ caution: WILL BE HOT!

all together this probably made...somewhere in the neighborhood of 6-8 servings?!

i kinda just made it up while i was going so the measurements are approximate but shouldn't be too far off. i thought it turned out super delicious. the cheese def makes it!

no prob. i thought it was really yummy and so did eric. but the cheese totally makes it, i think. its super easy to make and the good thing is you can really throw whatever you want in there that you think will give the broth depth and flavor! that is what i did anyway haha. but i'm no pilgrimshoes gourmet chef

Most important part of making French onion soup is deglazing the pan like 5-10 times to get all that yummy onion goodness.

figured out where she is working now and she seems totally stoked about it. Said we should come out for a first friday sometime (free food, booze, music, etc along with a bunch of art stuff)

That mighty collection of beer I purchased today will entertain me for weeks.

Combining that with my almost-ready-to-drink smoked porter brew hiding in my closet may result in some alcoholic fun times in the coming weeks. I'll try to keep it to two/night.

i came home tonight to the front door open and my roommate blasting the heat because she was "freezing"

and somehow didn't know the front door was open, despite walking by it several times (it wasn't WIDE open but it was definitely not closed)

you have got to be kidding me....

not to mention she was trying to heat the house 10 degrees, umm no. she pays a flat rate, i get to control the thermostat and i say NAY
