I think I am going to try to start making more fun salads. We had a chicken tortilla salad yesterday that was pretty good despite being from Walmart. And today I made a chicken salad salad. I need to bust out of the mold of mostly romaine or spring mix lettuce with some combo of tomato, cucumber, red onion, mushrooms and feta cheese.
