tori amos--the whole album strange little girls is covers from Slayer to the Beatles...Enjoy the Silence is my personal fave from this album...she's got a whole list if you like tori amos http://www.hereinmyhead.com/collect/sort4.html her cover of Zeppelin's Thank You is good but she gets rather tori-ish at the end

-the string quartet tribute to weezer *string quartet has a lot of instrumental covers that are good

I've always liked "Enjoy the Silence" for the creep-out factor, and Tori Amos's cover of it is even creepier than the original.
I also like "Helter Skelter" off U2's Rattle and Hum.

^^ It's not a cover, it's a rendition.

The real gray area is when a song isn't a standard, but its original artist is not its author.

Example: "I Heard it Through the Grapevine" was written by Motown's Whitfield/Strong duo and originally recorded by Marvin Gaye. Berry Gordy didn't like it, and the first version released by Motown was an uptempo take by Gladys Knight. She didn't write the song, and neither did Marvin, though Marvin's version has become most famous. On top of that, it was very common in Motown's golden era for a dozen different acts to record any given song. Are all these covers, or just renditions?

I don't think it matters who wrote it (in the case where it was not written by any of the artists who performed it), and I think it depends on the song. You made a good point that anything that's a traditional song will produce renditions, as well as for a standard that's been performed by so many people that there isn't a definitive "original". But it does get hazy for things like your example, or something like "All Along the Watchtower". Bob Dylan's version is the original, and well-known, and he did in fact write it. But most people would call the "definitive" version of the song Hendrix's version. Is it still a cover?
