I live in Winston so these will be a little further away:
Horizon's Park - Pretty easy, was built to be played with big discs so the holes are pretty short
Yadkinville - Good course, I consider it challenging since I haven't been playing long. There's a good group of guys out there with lots of different pin positions that are changed regularly. Gravel Tee pads.
High Point - I can't remember the name of the park, but it has 3 Tee Pads at each hole. I haven't played it yet, but from what I hear its nice.

Search Charlotte Disc Golf Club on google and I think that site will link you to all the courses in NC.

shot -7 over the weekend at Kaplan/Kentwood...and I didn't even birdie the first two holes! One off my personal best out there.

also, we did end up building a disc catcher...made of metal, wire, plastic garden trim (for the basket-top and bottom), and a wooden table top for the base - it's great, works awesome...is a little wonky on the bottom part...but it is badass. Portable and cost about $100 to make.

You can also go to http://www.pdga.com/ and click on "Course Directory" to see all the public courses (plus some private courses) in the U.S.

I went last year, and had a great time. It's really spectator-friendly, and most of the players are very approachable, especially after their rounds.

BEAUTIFUL weekend in the high country. I took a few shots out at THC Disc Golf Course (omg pun!) in Jefferson, Ashe County.

Hole 3, short tee is on the far left of the pic, pin is in the back left corner of pond:


Hole 6, duh:


Hole 9 short tee. Pin is in the field, left of the rhododendron patch. You can kind of see a small shadow cast by the pin. Short is around 500-550 ft, long tee adds another 150-200 ft.


Hole 7 long tee. Pin is under the 4th pine tree from the left:


Hole 3. Short tee is on left, pin is just out of view on far right:

If any of you happen to be in the high country ever, we do Sunday Doubles at 1:00pm. $4 to enter + $1 for ace pool. Very relaxed atmosphere with usually 12 or so players.
The back 9 is really coming along and should be open pretty soon and will make this the best course in NC by a mile. It's a pretty damn good course just off the front 9.
