i need a good bean recipe....keep the meat out of it please, while I'm not a vegetarian I just use other measurable sources for my daily protein intake
if possible, I'd like a low(er) sodium & sugar recipe too
i eat extremely healthy now and always will be eating these beans in 3/4 cooked cup(150 cal) portions....so far I cooked up 2lbs of pinto beans in 16oz of salsa and a ton of onion powder(didn't have an onion to cook em in)....came out somewhat spicy..soaked em overnight....cooked em on low for ~12hrs in 6 cups water, 16oz salsa....dunno what exactly i'm aiming for texture/taste wise....gimme ur recipes.... 2/22/2009 8:14:25 AM |

These are from a 5-ingredient crockpot recipe book that I've liked. All from the Vegetarian Section. If you want more, I'll PM you some.
Beans with Pesto 2 15 oz cans pinto beans, black beans or garbanzo beans, rinsed and drained 4 c water 1 large red sweet pepper, chopped 1/2 c refridgerated basil pesto 2 7.2 oz packages herb-seasoned rice pilar mix 1/2 c finely shredded Parmesan cheese
Combine beans, water, pepper, pesto and seasoning packets from rice mixes. Cover and cook on low for 4-5 hours or high for 2-2.5 hours. After, turn to high-heat setting, stir in rice mix. Cover and cook 20 minutes more. Top each serving with Parmesan cheese.
Bean-and-Rice Stuffed Peppers 4 small to medium green, red, or yellow sweet peppers 1 cup cooked converted rice 15 oz can chili beans with chili gravy 1 c Monterery Jack cheese, shredded 15 oz can chunky tomato sauce with onion, celery, and green peppers
Remove the tops of the sweet pppers, scoop out membranes and seeds. Set aside. In a bowl, stir together rice, beans and 1/2 c of the cheese. Spoon the filling into the peppers. Pour tomato sauce into the bottom of the slow cooker, arrange the stuffed peppers filling side up on top. Cover and cook on low for 6-6.5 hours or high for 3-3.5 hours. Put on a plate, spoon the tomato sauce over the ppers and sprinkle with remaining cheese.2/22/2009 9:07:54 PM |

As previously posted, Gzusfrk and I tried this recipe, modified just slightly.
Holy God, it has given me EPIC farts, worse than I have had in months. Lots and lots of farts, really hot on the way out, and sometimes they smell rancid.

^ The recipe just calls for canned for the convenience factor. I don't see why you couldn't soak the beans overnight and throw them in.
In regards to unsalty presoaked, I think you'd have to examine some of the brands. I know Goya makes Low Sodium Beans, but I doubt store brands would.
And, that was supposed to be rice PILAF mix, not pilar. Heh.

Cook bacon in a fry pan. Remove from pan. Brown onions and chicken in bacon fat. Put all ingredients in crock pot. Cook on high until done. Don't eat the bay leaves.

RIBS. These are really REALLY good. Fall off the bone deliciousness! Does use a lot of the dry rub, but they're cheap at Big Lots ($1 for a thing of spice). I'm serious about fall off the bone - you might need spoons to get your ribs out!
1/2 c paprika 6 tablespoons sugar 1/4 c onion powder 1.5 teaspoons salt 1.5 teaspoons black pepper
2.5 lbs pork baby back ribs (skinned) 1 can beer, coke or beef stock 1 quart BBQ sauce (I used a full Sweet Baby Rays and a half of an old one) 1/2 c honey
Its BEST if you have a George Foreman or some sort of grill plate to use. Heat it up to high (and lightly oil or PAM it). While it heats, combine the spices into a bowl and generously season the ribs (rub it in, what have you). Place the ribs on the grill, and cook ~ 3 minutes or until the ribs have grill marks (don't cook all the way through!)
Portion the ribs into sections of 3-4 bones, place in your 5 qt crockpot, and pour the beer/coke over. Cover and cook on high for two hours. Combine the BBQ sauce and the honey, add over the ribs and cook an additional 1.5 hours. You can garnish with white sesame seeds or chives if you want.
It was DAMN TASTY. I used Coke. Don't worry if the Coke doesn't cover the ribs, not supposed to. I had a lot of sauce left over, so if you don't want to open up another bottle of BBQ, you're probably fine. 3/4/2009 3:42:46 PM |

^ Yeah so that recipe was really bad. The stuffing end up not tasting very good at all. I think the cornbread mixed with cream of chicken soup just wasn't a good match. Perhaps its just not the best thing to do in a slow cooker. 3/10/2009 1:47:42 PM |

I made barbeque in the crock pot over the weekend and it turned out great.
Started with about 4 lbs boston butt (next time I'd actually go 5 or more). You can trim any excess fat if you want, but I left it as is for extra flavor.
The dry rub: I basically used equal amounts of each (~2 TBSP), so you can add or subtract whatever to your taste.
Dry Mustard Cayenne Pepper Black Pepper Salt Brown Sugar Chile Powder Cinnamon sugar
After the dry rub goes on I let it sit in fthe ridge throughout the day. I chose to cook over night to be ready for lunch the next day.
Preparing the crock pot:
1 onion sliced in the bottom Get a small bottle of White House Apple Cider Vinegar (about 4 cups in the bottle) and pour half the bottle into the crock pot. 2 TBSP yellow mustard 2 TBSP ketchup small can of tomato paste/sauce A few pinches of the left over dry rub
Now we're ready to start cooking on low heat.
And after about 12 hours...
Turn the crock pot off and let it cool for a little while... The meat is so tender at this point that it basically falls apart, so using some large spoons transfer the meat into a large mixing bowl. Now you can empty the crock pot, and begin pulling the pork with two forks.
And then return the meat to the crock pot
You can leave the crock on the warm setting before/while serving.
Now to make the finishing sauce. Take the bottle of vinegar that is half full still (I also added some vinegar from a jar of peppers I keep). Add red pepper flakes until they cover the bottom of the bottle. Add some ketchup and mustard like before, and some store bought hot sauce like Franks Red Hot/Texas Pete. Shake to mix well and you've got a decent sauce.
Add some of the sauce to the barbeque while its on warm to keep everything moist. Serve on buns with the sauce over top.

I was lazy and did this recipe in the crockpot instead of the oven. There might have been too many jalapenos cooking for too long because it was pretty spicy. Overall though it turned out pretty good, I saved the cheese and rice until after about 6 hours obv. I forgot about it so I did a couple hours on low an hour or two on high and then back to low. Also threw in some onion.

i had a green pepper growing really good on one of my plants and i was waiting on that sucker so i could make some chili. apparently late friday night or early saturday morning some sort of animal got on my porch and ate it. i found the branch that it was hanging on torn off and laying around the corner. the spot where the pepper had been hanging was all chewed up.
tons of stray cats around here. y'all think a cat would eat a green pepper? raccoon is the only other animal that might be around here and would eat it.

1 beef tongue, 3lbs 1 tablespoon beef bouillon 1 large yellow onion, quartered 6 garlic cloves, mashed 1 tablespoon cumin 1 teaspoon coriander seed pods, mashed 2 bay leaves 1 teaspoon coarse black pepper 1 teaspoon white pepper 1 tablespoon kosher salt water, to cover
Place ingredients in crock pot & cook on low for 6 to 8 hours. You can slice the tongue lengthwise to make it fit. Once tongue is done (it's no longer pink) remove from crock pot & peel off outer layer. It comes off pretty easily once it's fully cooked, like a banana peel. Chop or shred meat. Make tacos like you normally do (tortillas, meat, salsa, guac, lettuce, etc). 8/9/2009 9:51:14 AM |
