I finally decided to make the energy bites for which I bought dates and coconut a month ago.

The site with the recipe is having technical difficulties and is down as of 2/27.

8 oz. (about 1 packed cup) chopped dates
1/4 cup honey
1/4 cup pumpkin puree
1 Tbsp. chia seeds or flax seeds
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground nutmeg
pinch of salt
1 cup old-fashioned oats (dry, not cooked)
1 cup toasted coconut flakes
1 cup toasted pepitas (pumpkin seeds)

Combine the dates, honey, pumpkin puree, chia (or flax) seeds, cinnamon, ginger, nutmeg and salt in a food processor, and pulse until smooth and combined.

Transfer the mixture to a large bowl, and stir in the oats, coconut flakes and pepitas until evenly combined. Cover and refrigerate for at least 30 minutes.

Once the mixture is cool (and easier to work with), use a spoon or cookie scoop to shape it into your desired size of energy balls. (Mine were about 1-inch in diameter.) Alternately, you can line a small baking pan with parchment paper, and press the mixture evenly into the pan, let it cool, and then cut into bars.

Store covered in the refrigerator for up to 2 weeks. (Storing them in the refrigerator especially helps the energy bites hold their shape.)

They are from Gimme Some Oven. All her recipes are now showing up right now because it looks like she has them embedded and that's what's broken. But I made her cranberry pistachio ones a while back, and they were really good. Except I used pepitas instead of pistachios in those too.

Follow-up FWP: Our food processor is a crappy little mini one that can't actually seem to handle processing anything. Whenever I use it, it's

And as much as I want to get a new one, I shouldn't because it's one of the few kitchen things we actually don't have that I can put on our wedding registry.

man, that would be awesome but i don't want to put that burden on you. But if it's something you think about when there i'd definitely pay you extra for the troubles.

Kilkenny is one of my favorite places in Ireland, hope you have a great time. Seeing a hurling match there will be an awesome experience. The entire town is so wrapped up in that team that it's ridiculous.


I finally got the O'neills site to work. $65 for the kit, $18 to ship international. Not sure i'm going to pull that trigger.
