i am so stuffed, too

this was my first cobbler and it was amazing BUT now that i know what goes in cobbler i'm kind of grossed out

its pretty much all butter, sugar, and shortening


oh. and some fruit.

^I have a good recipe for cobbler that's not as gross/fattening

pork tenderloin (marinated in pomegranate juice)
served with a healthier version of a mustard glaze
baked apple slices
healthy brownies made from fresh pumpkin

delicious and nutritious ]

tonight i am making:

some type of chicken OR maybe if i'm feeling gutsy, ribs. but probably just chicken. can't decide on what kind (baked, bbq, fried, whatev)

a spinach salad with hard boiled egg, bacon, purple onion, roma tomato and balsamic

You mix ricotta cheese, green diced chiles, and some shredded cheese (Mexi style) then spread that mixture onto 8 cooked lasagna noodles. Then you put a layer of black beans (drained) on top of that and roll them up, jellyroll style. You put them seam-side-down on a baking dish and pour some salsa on top, bake for like 30 min around 350 then garnish with cilantro sprigs

Place lasagna rolls, seam sides down, in an 11 x 7 x 1 ½-inch baking dish coated with cooking spray. Pour salsa over rolls. Cover and bake at 350° F for 25 minutes or until thoroughly heated. Garnish with cilantro sprigs, if desired.

Makes 8 servings. Per Serving: 2 ½ Starch, 2 Meat, 2 Free."

Check out this recipe for chicken tikka masala:

I use the store-bought curry paste to marinate the chicken. Its in the oriental section of HT.

Also, I substitute condensed milk instead of the heavy cream.. cuts down on the fat and condensed milk keeps for a lot longer.

ooh, i could use that too. i kind of want a veggie smorgasboard (sp?) so i'm thinking cabbage leaves and eggplant slices would work well for the "noodles". i guess i really don't need a recipe.

seems like it'd be hard for it not to get slimy and just a terrible texture

eh, the only reason i suggest cabbage leaves is because years ago, a coworker of mine (who is no longer with the company) went low carb for awhile and his wife made him cabbage lasagna once a week and he raved about it. so i figured it could be done. perhaps only half cooking the cabbage? who knows.
