It's a whole fillet, as opposed to cut up. Its good.

Me too. I'm fairly sure that Tilapia is actually a Japanese word... the translation of which literally means "sacred fish".

About the same in cost.

I like them bc they're an easy-to-digest source of protein.

Im planning an EPIC day of cooking tomorrow.

Breakfast: bacon, eggs, pancakes

Lunch: probably just snack all day so I'll be ready to eat my epic dinner.

Beer can chicken on the grill. Except I wont use beer, I'll use a chicken broth mix with some seasoning. Steamed veggies for the side. And I'm cooking a blueberry cobbler in my new dutch oven.

a peppercorn crusted mahi filet over garlic wilted kale, with a parsnip puree bed... blood orange reduction.

my plating skills fucking suck

and in hindsight, probably should have let the reduction go a bit more to get more syrupy, and less on the plate, but the flavors were totally there.

maybe a touch one note texture style, but crisping the mahi a bit more could have alleviated that
