i'm making a turkey meatloaf
except i'm adding a pound of chopped cooked bacon to the loaf before baking

i hope it comes out OK
i always worry that turkey meatloaf will be really dry

YUM MY CHICKEN IS JUICY

marinated over night in lea and perrins + italian seasoning + crushed red pepper

and i <3 this kind of rice. it has pine nuts!

It was delicious! The bacon was a really awesome addition. And it wasn't dry at all! I'm shocked! But, there wasn't enough moisture in there to thoroughly cook the peppers and onions. Sadly, most the of onions were barely cooked and not that edible. At least I know next time to cook the onions beforehand.

i'm saying they were mostly raw, and in meatloaf that isn't exactly ideal

doesn't sound that bad to me. sounds about like raw onion on a burger.

but i like onion so whatever

im getting a little excited about the dinner ive got prepped and ready to cook

kinda spoofed a tandoori marinade for a quick chill on turbot fillets, gonna broil them off with butter on top.. i have no idea if this is going to work at all, but fuck it

quick blanche some broccoli raab, then sautee with mirin

and a parsnip puree

sauceless, and flavors all over the map but this is what happens when you compose a meal when you're starving

Taco Pie

2lbs lean ground beef
2 packets Mild Taco seasoning
1 small onion
1 red pepper
1 can kernal corn (drained)
1 can black beans (rinsed and drained)
2 cans (14oz) diced tomatoes (drained)
1 box spanish rice
1 cup crushed tortilla chips (any flavor)

Preheat oven to 350 degrees.

Brown ground beef with chopped onion and red pepper; drain. Mix in taco seasoning and cook according to package. Set aside ground beef. Prepare spanish rice according to package and set aside.

Combine the corn, black beans, and diced tomatoes in large bowl with the prepared ground beef and spanish rice. Mix well, and pour into a 13x9 glass baking dish. Bake at 350 for 20mins. Top the dish with crushed tortilla chips, and then bake an additional 5-10mins.

Optional toppings for your plate: sour cream, chopped fresh tomato, shredded lettuce, shredded cheese or cheese sauce.



I came up with this a year or two ago when I wanted tacos but I wanted it all in one dish. I typically use Lime Tostitos.

subway. i went there earlier this week after the gym and they gave me a buy one get one free coupon....so i got 2...one for tonight, and one for lunch tomorrow. im starting to hate subway actually...i eat it too often, but its right next to my gym, and it helps keep me away from less healthy fast food places.

lemon pepper marinated shrimp, put on the grill on kabobs with red pepper and onion

i also bought a couple bacon and onion salmon patties, not sure we'll grill those tonight or not

i might make some broccoli, and maybe some toasted pine nut couscous
