the protest was about the degree of difficulty (maximum score), not the actual performance itself. i'm guessing the coaches knew what the DoD was beforehand, and when they probably showed it on the screen afterward with the deductions, knew immediately that it wasn't right. i don't have a problem with that

I've gotten the feeling this Olympics that DoD is a well-understood metric going in. Because they have talked about such competitor having the highest DoD in a routine, etc. So, maybe their routine is submitted beforehand and graded on DoD and the DoD score may change on dynamic alterations during the routine(Alli taking out part of a tumble on the floor routine), but you if you go straight through what you planned you would know what your DoD score should be. So, I think your guess is probably pretty accurate.
