well I can tell why it's a spring. Same concept as a stove only wound tighter and thinner, right?

because it is. bimetal spring means one metal with one thermal expansion rate on one side, and another metal with another rate on the other- thermocouple, wall thermostat, stove operated choke, all kinds of things work on this principal
