I'm currently looking into these systems to deploy one at work and wanted some opinions to help rule out some of them because there are TONS and I don't have time to deploy a local installation of each one to test it thoroughly.

What are the best ones out there that are easily customizable and do pretty much the basic stuff that you'd need a bug tracking system to do?

I'm looking into these right now:
• BugZilla : http://www.bugzilla.org - heard it’s very bloated – may not be all that it’s made out to be for our needs.
• phpBugTracker : http://phpbt.sourceforge.net/ - claims to the the PHP version of BugZilla
• Eventum : http://dev.mysql.com/downloads/other/eventum/ - cluttered and complicated UI, good features
• IssueTracker : http://www.issue-tracker.com/
• mantis: http://www.mantisbt.org/
• NetOffice : http://netoffice.sourceforge.net/modules/news/ - can't even get the demo or a local install to run correctly but the screenshots (http://netoffice.sourceforge.net/modules/xoopsgallery/view_album.php?set_albumName=album01) look promising
• Streber pm : http://www.streber-pm.org - still no v1.0 but it looks good and the demo works decently
• Roundup : http://roundup.sourceforge.net/ - python based
• Trac : http://projects.edgewall.com/trac/ - python based

Opinions would be helpful to filter some of these out.
