Because defenders don't usually bend all the way over and stare at the ground when a dude they are supposed to tackle is running towards them.

jumping over a guy is a good way to get your legs broken. it doesnt happen more because oyu learn early on not to do it.

yeah my old roomate used to complain about how much jumping there was in football movies and such, good way to get trashed in midair by a defender

I think the easiest way to answer this is:
Defenders are supposed to follow the eyes of those with the ball. You'd never get away with this with a good defender, and you'd most likely end up seriously injuring yourself. There is a reason kickers have special rules protecting them... they are putting their bodies in awkward positions when they kick.
