I just made a sandwich that I estimate was 4 or 5 inches high. I think it was too tall. There has to be some kind of golden sandwich ratio that will tell me the perfect height. Maybe you could take into account the strength of the bread. I had to do the thing where you bite the top half, then the bottom half because the sandwich was too tall for a single bite.

I can't imagine a sandwich without meat (besides pb&j). but your sandwich sounds sorta good. The peanut butter doesn't really seem to fit in though.

The peanut butter just doesn't seem like it belongs. Mainly due to the onion, the garlic, and the spinach. If one was handed to me, I'd give it a try, but it just sounds...off. Delete the PB and it sounds pretty damn good though.
