What are the chances of getting a disease from a dirty cook in a restaurant? Like from a cook who doesnt wash his hands, or spits in the food or bleeds in it. I have read it is most likely rare

Read Kitchen Confidential by Anthony Bourdain. Then if you ever eat out again, remember all the crazy shit that he writes about really does happen and people rarely, if ever, pick up communicable diseases from prepared food in the US (hepatitis being an exception, I believe).

i think i would be scared to read that book, but what i have read hep A is the one that may be common in these situations

how about hep C or HIV, if we're talking about someone bleeding into your food...

hiv would be nearly impossible to contract from food if at all possilbe. once the blood hits oxygen, chances of spreading hiv diminish drastically.
