God I love it, it's one of the best parts of the holidays.

I think I'm gonna stock up on cans of pumpkin so I can make it all year.

Grocery stores stock canned pumpkin year-round.

If you're too stupid or lazy to find canned pumpkin in the grocery store, you're too lazy and stupid to be in the kitchen.

I won't argue the lazy part.

But enough of that, this is not a listen to ambrosia bitch about nothing thread, it's a thread about the awesomeness of pumpkin pie!

My mom wanted me to make two of them and bring to the family gathering, but they only ate most of one.

So I had a whole pumpkin pie to myself when I came home.

I ate 2 pieces of it yesterday, and will probably do the same today.

Yeah, I guess if you are retarded, then this would make sense. The custardy goodness of pumpkin pie completely destroys any convenience of muffin form.

Have a pie my folks left; fed half of it to friends last night.

Liked it enough that I'll probably be baking another in the near future, and the recipe makes two pans. I'll sell/give the other to someone, and will take orders.

You use Pie Pumpkins if you want to make it from scratch; they are smaller, sweeter, and have more flesh.

it takes 15 ounces of pumpkin to make a pumpkin pie.

And pumpkins vary in size greatly.

and i forgot to say this:

canned pumpkin is not made from the large rounded orange variety of pumpkin. it is made from smaller, elongated (think butter-nut squash shape), greenish-orange pumpkins, and i forgot their name. can't remember what channel/program, but i saw that mentioned on tv like a month ago.

should say the variety on the can google right?

i have looked at Libby's cans, and they say "100% pure pumpkin" only.

google helped:

"Processing
All C. moschata, tan skin color, widely used for commercially canned pumpkin

Buckskin (hybrid)
Chelsey (hybrid)
Dickinson Field
Kentucky Field"

Quote :
"Over the years, Libby's used agricultural research and selective systems to develop a special variety of pumpkin (a type of squash) ideal for canning and consistent quality. That would be the Dickinson squash with rich, golden-orange color and creamy texture.

These are very different from Halloween field pumpkins; the Dickinsons are smaller, squat, meatier, heavier, sweeter and more dense.

About 5,000 acres of the sweet Dickinson vegetables are grown on their vines annually, exclusively for Libby's, in the rich farmlands around Morton, Ill. And nothing is added to the pumpkin during the cooking and canning process. No salt, no sugar, no flavorings or colorings. It's all pure pumpkin. "

http://www.dailynews.com/food/ci_7323314

Quote :
"While any pumpkin variety can be used for decoration, varieties higher in sugar and lower in water content should be used for cooking. They can be labeled "sugar sweet" or "pie" in the market and are 6 to 8 inches in diameter. Although those sold for carving tend to be dry and stringy, they can be cooked, if desired."

http://www.lesliebeck.com/ingredient_index.php?featured_food=27

Quote :
"There is an incredible variety of pumpkins available but almost all of the pumpkins you will find are most suitable for use as jack-o'-lanterns at Halloween. These deep orange pumpkins, most of which are a variety called Connecticut Field, are too stringy to eat and often very large (they can exceed 200 pounds!). For pie filling and other cooking needs, sugar pumpkins are much better - they are a smaller, sweeter variety with finer-grained flesh.

Processing - widely used for commercially canned pumpkin:
Buckskin
Chelsey
Dickinson Field
Kentucky Field "

http://www.pumpkinnook.com/howto/variety.htm

Quote :
"Cucurbita Moschata-- This group includes the pumpkins frequently used for commercially canned pumpkin. They tend to be oblong pumpkins and have tan skin.

Cucurbita Pepo- - These are the Jack-o-lantern varieties you most commonly see, and the cute little pumpkins that fit in the palm of your hand. Common pumpkin varieties include Connecticut field pumpkins, Howden pumpkins, and Howden Biggie pumpkins. "

How to make your own pureed pumpkin just like the canned one (not as wasy as you think).

"Topic/Question: J. How much pumpkin is in each size can of Libby's Pumpkin?

Answer: A 15-ounce can of LIBBY’S 100% Pure Pumpkin contains 1 3/4 cups of pumpkin. A 29-ounce can of LIBBY’S 100% Pure Pumpkin contains 3 1/2 cups of pumpkin. "

I searched "Dickinson pumpkin" on google image search, but no relevant results. Didn't try "sugar pumpkin", "milk pumpkin", "pie pumpkin", or "cheese pumpkin" on image search.

Try those.

Egg nog is very, very tasty.

Not knowing any better, my roomate and I tried to make a pumpkin pie from jack-o'-lantern/carving pumpkins last year. We figured that they have a lot of extra flesh that goes to waste, why not, right? The result looked right, but certainly didn't taste right. Wasn't sweet at all. Only later was the existence of "pie pumpkins" discovered.
