I know you can use a wireless router as an access point by simply turning off DHCP, but is there a way to do this without wires between the actual router (which is also wireless, obviously)?

Basically I need to connect a few non-wireless computers to a wireless network without having to buy a bunch of wifi adapters.

Yea, set the AP as a repeater, run your wires to it.
