I like getting ribs from HT..

boiling them for about 10-15 minutes to soften them up, then soaking them in Jack Daniels barbecue sauce in the fridge for an hour or two.

Then Grill them on a charcoal grill or gas grill with mesquite wood chips and smoke the hell out of them.

If you're gonna do ribs right for tonight, you need to start now and either crock pot em for awhile or boil em. Then finish them on the grill for a bit.

heh, yeah...this spur of the moment idea probably won't work out then.

by the time I get to the store, and crockpot them, it'll be 8pm. I think it's supposed to start storming around 7pm anyway...
oh well, another day then

You can pick up a good smoker for $50. The downside is that it takes 8 hours or so.

i got some of that yesterday and griled the ribs

i boiled em in water and full bottle of stubbs and then grilled em while basting with the juice in the pot and put sweet baby rays on last and griled just enough to cook the bbq sauce onto the ribs

make sure to remove the pleura from the ribs first
i boil em on a low boil for about 1-1.5 hours
use sage, ground pepper, season salt and cajun seasoning in the water
do it too much and they will fall apart
I then put em on the grill
i use a gas grill with hickory smoking chips, and get a good smoke going before placing on the grill
then i leave em on the grill for about 30 minutes to get some smoke flavor
then start basting the ribs w/ sauce, usually a couple of coats on the bone side, then flip and a couple of coats on the meat side

sauce wise, i just start w/ kraft original and add a few things
like beer/bourbon, honey, texas pete, cajun seasoning, sage, basically anything you want

HT has Angus filet on sale for 11.99 a lb, or at least it did yesterday. It's not a killer deal, but its what Im havin tonight.

^^^they were on sale at harris teeter for a while, $5 for a rack of beef ribs, dont know if they still are

its not so much about taste as it is about texture
they'll taste fine w/ it on, but with it removed they will be much more tender
and "fall off the bone" tender may be possible with it on, but is much more likely to happen with it removed

i actually like to have to thrash my head top get the meat off the bone when grillin


it just feels like its supposed to be that way, so i dont cook ribs to fall off the bone but if i pay for it at restaurant than i expect the meat to come off easy

I tried Mama Dip's recipe and it was awesome. I don't have it in front of me but it requires boiling the ribs for 30 minutes (for 3 pounds), and the sauce has mustard, vinegar, worcestershire sauce, hot sauce, salt, and pepper. It's not a sweet sauce, more vinegary, but it was damn good. I used it on beef ribs but it could easily work for pork too.
