When it comes to chocolate as far as flavor goes, the opposites go like:

sweet
salty
sour
lean

I am voting a Margarita as being the opposite of chocolate.

And I am saying lean versus rich.

Well if you want to go that route, why choose something sweet like a margarita? Why not just "tequila"...or "bacardi 151"

I chose the combination of flavors because naturally, chocolate is bitter and rich. In order for something to be as far from chocolate, in taste, as possible, it would need to be sour, sweet, salty, and lean. That is the only way for it to have all of the flavors that chocolate does not naturally have.

Well it has absolutely no fat in it, which is what translates over to tasting "lean" as opposed to high fat items that taste "rich".

Okay, well if we are talking what you normally find when it comes to chocolate, I would vote for the flavor of a "Salty Dog" being the most opposite of "chocolate".

Sorry for considering the ACTUAL flavor.

Head cheese is very rich and though different, the flavor profile is not that different.

Same with Liver Pudding (not salty at all normally, but it is very rich and not at all sour or salty).

Scrapple is pretty in line with liver pudding.
