There's going to be 8 people. One person is bringing a dessert and another person an appetizer. It's supposed to be seasonal but that gets interpreted very loosely with this group.

I'm thinking something with chicken or pork, mainly because those are cheap

^^ I'd prefer something that can be prepped in less than an hour, though actual cooking time can be longer than that.

If you have a crockpot:

Get a pork roast, and a lot of rosemary, and some garlic, and some water - ~0.5" in the bottom of the crock
Lay the garlic in the bottom of the crock, put a little more than 1/3 the rosemary below the roast, and the rest on top of the roast.

Put the crockpot on low, lay a dish towel over it, and cook it til it's done
It's properly done when you can barely lift the roast out of the pan, onto a plate.

REALLY easy but tasty dish would be to marinade some chicken breasts in zesty Italian dressing and to grill it. but since its a dish i'd make kabobs out of them and add some pineapple and tomatoes and red bell peeper to the skewers. Get the bamboo ones too that would be seasonal and cute.

Soyaki sauce from trader joe's + tilapia: marinate for a bit, and then pan ?fry? (I don't know if it's pan-frying if the only oil used it to keep the fish from sticking to the pan)

I don't have a crockpot but I do have a pressure cooker I've never used before. Would a pressure cooker get the same effect?

the other ideas are spot on, I would suggest fish or shellfish.

Fish meaty white fish in a skillet or grilled or a shrimp pasta with a bunch of veggies

Yeah, I bought some shrimp today to make some, but I think I did not buy enough so I'm gonna get more. I can seriously eat the stuff exclusively for days and days after I make it. Just that good.

Risotto is one of those things where it's just as easy to make a huge pot as a little bit, so sure. Get some shrimp and I can get out the big stock pot.

Making ribs isn't that complicated. It's usually just a deal where you wrap em up in foil and put some sauce on em in a nice amount and keep them in the oven for a good long while. Add MOAR sauce when done and you get some delicious ribs. Just look for some suggestions on timing them and how you cook them. It's simple, I know, but I've never done it. Shits are delicious but never that cheap to make.

baked salmon. those filets are big when you buy them and not too expensive. bake and add a dish of steamed veggies and you'd be golden.

If ribs weren't so retardedly hard to find/expensive in this country I would be all over that. I make a mean BBQ sauce.

Lamb stew also sounds amazing but lamb is impossible to get here

So far I'm leaning between the kebabs and sticky lemon chicken.

since it's 'seasonal' I think I would go with something from the grill. Maybe some BBQ chicken w/ a orange zest glaze or something with a little heat in it. Summer to me = little bit spicy.
