I know this is kind of a weird question, but I figure someone might have an idea.I had some za'atar at a friends house and it contained sumac. Now, I already have some sumac, and I bought some green za'atar at Neomonde, but it doesnt have the same tart flavor, presumably because of a lack of sumac. If I were to add sumac to the za'atar I have, about how much would you think to add? 2 tablespoons per cup... half cup? Just asking for suggestions or experience.

Just from general cooking experience, I would add to taste.

yeahhh... I'll test it and post results

Update: I'm pleased to report that 2 parts za'atar and 1 part ground sumac make a deliciously tart but herby mixture.
