I've pretty much never cooked anything that didn't come with instructions. I worked in a grocery store for like forever and people would always give me recipes and shit in line but i could never remember them. So here goes

Okay someone teach me how to marinate chicken breasts. Like BBQ or something else that when its done i can just throw that b on the grill and call it a day.

Other people can request recipes or post their favs/specialties in here.

This has been a walls1441 presentation.

hey walls, they got some marinara sauce at the grocery store, defrost that shit, toss it in the fridge full of the sauces (whichever you prefer) for an hour, and cook that shit up.

You just buy some marinade and put the chicken breasts in it for a few hours to a day. Sometimes I put it in a zip lock bag and flip the bag occasionally throughout the day.

As for marinades, they have a ton of them specifically for chicken. Italian salad dressing is a good marinade for chicken. You can also use any BBQ sauce; sweet, hot, or vinegar all works fine. If you go to the asian store you can pick up some Drunken Chicken marinade which is pretty dank.

oh shit, while we're on that subject teach me how to cook with alcohol. my uber christian parents frowned upon that. which just resulted in me making bagel bites doused in beer the other day "beergle bites" ahahahaha.

just start mixing sauces or creating sauces and spices until you find something you like, that's what i do.

for example I love sweet and spicey/azn floavors, so for pork chops i put chopped garlic, minced ginger, OJ, soy sauce, splash of olive oil, honey, sweet chille sauce, whatsthishere sauce, and a bit of some generic honey bbq sauce in a sauce pan and reduce it down to a glaze while i cook the chops.

i mean if you want the most basic of marinades, just get a bottle of italian dressing pour it over some chicken breasts in a plastic ziplock bag, get as much air out as possible and put it in the fridge for a couple hours. I'm not a fan of italian dressing personally but alot of people seem to like it.

i'm not a huge fan of italian. most of the sauces that i like for chicken tend to be more red or yellow, and less clear. I'll report back next time i go to the grocery store.

ginger dressing is really good as a marinade. only if you get the right kind though. it comes in the refrigerated section. i think it is the simply fresh version. that is a good chicken marinade.

Get some Open Pit BBQ sauce (not widely available in NC, but can be found), coat chicken breast with it, and throw chicken on the barbecue. Quick, easy, and BBQ flavor.

oh man, i have an AWESOME marinade that i LOVE. i've used it on chicken or beef, and it works great either way...

but.. of course i left my notebook at home, dammit!

it was a concoction of

soy sauce
olive oil
brown sugar
vinegar
fresh ground pepper
salt
minced garlic (not the powder, it's not the same)

shit, i can't remember what else, i'll try to remember to get you the recipe after work.

edit: i usually let mine marinate over night, it ensures the meat will be real tender. i love to cook beef in the crock pot, after cooking all day it just falls apart and it's delicious.

an acid is a good way to break down the tough connective tissue in cheaper meats

go get yourself some skirt steak and marinate it in lime juice with some tequila and salt... like you're making a margarita right?

then cook it really quick in a very hot skillet (cast iron preferred) or slap it on the grill
if it is a thin piece only a couple of minutes per side

before you start all of that though cut up some onions, tomatoes, cilantro, avocado, whatever

slice up the beef when its done, stick it in a tortilla and you've got some good tacos/fajitas

i found the recipe:

1/4 c soy sauce
1/4 c vinegar
3 cloves garlic crushed (more or less depending on how you like it)
1/2 tsp season salt
3 Tbs brown sugar
1/2 tsp pepper
1 Tbs olive oil (or canola oil)

i usually double it, but it's pretty tasty in my opinion

hey, no one mentioned this but stab it(the meat youre marinating) with a fork a couple times. with bigger meats (such as my dong or london broil) it'll really help with flavor SOAKAGE

Bbq sauce should be added at the end of cooking because it usually has sugar in it. The sugar will burn, so it doesn't make a good marinade. Unless you like burnt BBQ sauce, that is.

keeping brown sugar around sucks. it forms a brick and i just don't use it often enough to warrant buying it. plain sugar works just fine.

^^ if that happens, put the brown sugar in a ziploc bag with a slice of bread or a slice of apple. i promise you that'll put the moisture back in it.

my mom had ~ 5 boxes of dried up brown sugar and it worked for all of them.

this thread is funny to me.

^ You can also just put the brown sugar in the microwave for about a minute and it will un-brick. If it doesn't, then it's not really any good to use anymore.

I have known way too many people who made horrible grits. So i bestow to thee:

Cheddar Grits

4 parts stone ground white grits (none of that instant or quick cook shit)
1 part heavy cream
1/2 part whole unsalted butter
14 parts water
2 parts aged white cheddar
Salt and pepper to taste

Bring all liquids to a boil over medium-high heat.
Add in grits and reduce heat to low.
Cook, stirring occasionally, until grits are softened.
Stir in cheese and remove from heat.
Eat.
